This is a lovely twist on a great classic.
It’s a great accompaniment for grilled meat, topping a homemade burger and to have at bbq’s. This makes enough for four generous helping so you can adjust the recipe to suit.
- Half of a red cabbage
- 1 small red onion (you can use spring onion if you want a subtler flavour)
- 2 carrots
- 4 tbs of low fat natural yogurt
- 1/2 tsp of garlic powder
- 1 heaped tsp of smoked paprika
- Pepper to taste
- Small bunch of coriander
Depending on how chunky you like your salad you can either shred/chop the vegetables or I like to grater everything to make it a bit finer. So chop all your veggies up and put into a large mixing bowl then add your yogurt, paprika, garlic powder and pepper. Mix everything together; make sure all your veggies get coated in the lovely yogurt and spices. To serve rip up your coriander, stalks and all and sprinkle over the top.
